my buns

The Original Loaf in Bun Form
Yield: a dozen buns
430 g bread flour
345 g water
1/4 tsp yeast
10g salt
Cover and leave on the counter for at least 12 hours.

Give the dough a good mix in the bowl (a dozen turns).
Turn  out onto floured counter.
Sprinkle with flour and fold a few times.
Sprinkle with flour and back into a bowl for two hours, or til doubled

Turn onto floured surface, sprinkle with flour.
Using a dough scraper, cut and scoop the dough.
Place on parchment lined pan.
250° for 5 minutes, then 230° for 5 minutes'ish
Done once internal temp hits 205°
