carrots & sugar

Trying for a cookie like that at Dylan’s in the Shell gas station in Point Roberts.  I’m not there yet.

  

Carrot Cupcakes
Adapted from Carrot Cake III
Yield: 5 square cupcakes
Whisk:
1 egg
60 ml veg oil
45 g white sugar
45 g brown sugar
2 ml vanilla
Just fold in:
Sifted
55 g a.p. flour
1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 tsp cinnamon
Lastly:
75 g small grate carrot
25 g chopped walnuts
175 degrees til toothpick is clean
Cool in the pan

Cream Cheese Frosting
Cream:
cream cheese
dash of vanilla
sugar to taste
1/8 tsp of grated fresh ginger
