Just took my crusts out of the oven and now lying at the pool waiting for them to cool.

Didn’t do a pie crust though, did tart shell crusts. Also cut your recipe in half.

No Graham crackers over here. Bought Oreo cookies and then scraped off the icing. (One full bag made roughly 3/4 of a cup. Enough for 12 tarts).  Thinking I’ll bake chocolate cup cakes and use the Oreo frosting and the left-over cream cheese for a filling.

So I made the mistake of freezing cream cheese.

It separates and destroys the texture. It was really wet and as a result my cheesecake didn’t set properly. Still tasty, but now like an Oreo cookie with cream cheese frosting. I’ll certainly try again with fresh cream cheese.

I did a quick hot mango compote to go on top. Strawberry season is around March, (grown in Sanya, but still pretty expensive (as far as fruit goes) 16’ish yuan/jin) and if it’s not in season, it’s not here  (with the exception of blueberries (imported from Chili 30 yuan/jin) and cherries (from the Okanagon! or the US 45 yuan/jin).  Besides strawberries, what’s a good fruit to go with Oreo?
