scones

We’re leaving soon, so I wanted to use up the pre-grated parmesan sitting in the fridge and our rosemary bush. I tweaked mom’s scone recipe.  You couldn’t taste the parm (generally can’t with the Kraft stuff), but it certainly made them salty.  The rosemary was quite nice though.

  

Mom's Scones
Yield: 12

Sift:
200 g flour
2 1/2 tsp baking powder
1/2 tsp salt
25 g sugar
Cut in:
80 g butter

Make a well, pour in whisked:
110 g milk
1/2 egg

Used the other half egg for wash
400° for 10 minutes
*Make sure the dough's dry enough, 
still tweaking with high humidity

  1. Shame about the parmesan, perhaps you should invest in the proper stuff? It’s worth it. Either way, these look rather delicious.

    • Thanks for the comment. The issue with buying proper parm is that, in our city, it only comes in 5kg blocks! That’s a lot of parm, so we must find friends to split it with and no one cooks as much as we do… After summer holidays we’ll certainly organize a group buy though.
